RECEIPE OF THE MONTH - JULY 2010 - SPLIT PEA AND HAM SOUP

SPLIT PEA AND HAM SOUP 
Ingredients: 
1 cup green split peas
3 white onions, peeled and pureed
1 clove of garlic, minced
1 ham hock
2 litres of water
Salt and pepper
1 cup green peas, cooked and pureed
Croutons (deep fried cubes of bread), to garnish
   
 
Method:  
Soak the split peas over night in water.  Drain.  In a large soup pot place the
pre-soaked split peas, ham hock, garlic, green peas, pureed onions and water.
Bring to the boil and then simmer for 1 hour, ensuring the meat on the ham hock has broken up and that the split peas are soft and tender.
Remove the hock and season.  
Serve with the croutons (sippets) in a separate bowl.
